This is a very easy recipe and the end result is just yummy.

So here is what you need:

  • 200g margarine/butter, melted
  • 3 cups of rolled oats
  • 2 eggs
  • 1 cup sugar
  • 1 cup self-raising flour
  • 200g chocolate chips (optional)
  • sprinkle nuts (optional)

Here's the method:

  • Preheat the oven to 180 Degrees Celsius and line the baking tray with wax paper ( and if you're still doubting the wax paper like me, spray Cook 'n Spray)
  • Mix the melted margarine/butter with the oats.
  • Add the sugar, eggs and the flour and mix well.
  • Place the mixture in the baking tray and with a wet hand, press out the oats mixture until it is about 1-1.5cm thick.

  • Bake for approximately 15minutes or until golden brown. 
  • About 5minutes before the oats squares are done, take out quickly and sprinkle the chocolate chips over. Place back in the oven to finish baking.

  • When done, cut into squares and if you'd like to, sprinkle some nuts over before the chocolate cools down.

Some Other Great Ideas:

  • Mix some diced dried fruit to the oats mixture before baking. 
  • Use white chocolate instead of milk.
  • When using a normal slab of chocolate, chop up into smaller chunks and use the same as chocolate chips.
  • Mix some nuts, pumpkin seeds and dried fruit, and use brown sugar instead of white sugar for a healthier version.

I Baked You A Gift

This weekend which just passed was one hectic weekend. It was one of my friend's birthday and I really wanted to give him something that's from me, and being me that means either cake or cupcakes.

 For this recipe I decided to try something new and by that I mean that I used Chocolate Flavoured Steri Stumpie (milkshake for those who don't know Steri Stumpie) instead of water/milk

Ingredients

The How To Ingredients:
  • Packet of Muffin Mix or favourite cupcake recipe (I took chocolate muffin mix of Snowflake)
  • Nutella
  • Oreo Cookies
  • Chocolate Steri Stumpie
  • 2 eggs (following the packet instructions)
  • Oil (follow packet instructions)
  • Spray And Cook
Following the instructions of the easy mix packet, make the cupcake/muffin dough. Important though is to remember to replace the water/milk required with the chocolate Steri Stumpie. My packet instructions said 200ml of water, so I added 200ml of Steri Stumpie.

Next step is to lightly spray the muffin/cupcake pan with Spray And Cook and place the cupcake paper-cups in the pan. I then placed an Oreo cookie in each cup, but another great idea is to add a teaspoon of raw cupcake dough first and then place the Oreo cookie on top. A nice generous spoon of Nutella is the added on top of the Oreo cookie.

And lastly add the cupcake dough, and bake according to packet instructions (e.g. 180 Degrees Celsius for +-20minutes) After waiting for the cupcakes to cool down, make your favourite icing of choice and top each cupcake with a dollop of icing.

Some Other Great Ideas...

  • Make icing with leftover Steri Stumpie, by simply just mixing icing sugar and Steri Stumpie until a manageable icing 'paste' is made.
  • Chocolate not your favourite flavour? Try making vanilla cupcakes with Vanilla Steri Stumpie. There is a reason there are different flavours, make use of them ;)
  • If Nutella isn't available, try chocolate. Simply add a piece or two to each cupcake before placing them in the oven.
